our story

Fidelari was born from Valentina and Vanessa’s desire of changing the usual suspects into the pasta scene in London and creating new stars. 

Their journey started at the renowned fine dining restaurant Theo Randall at the InterContinental, an institution for pasta lovers in London, where they had the opportunity to work side by side with Chef Theo himself.

The inspiration for this project came from reminiscing family moments and the nostalgic feeling of being back home in Puglia, as well as discovering and playing with local ingredients. 

Fidelari’s main purpose is to share their homely costumes and give you a sneak peak of the Italian lifestyle.

Vanessa’s been gaining work and life experience living in large cities such as Rome, Sydney and finally London where she has built a great reputation for herself, working with industry heroes such as Fred Sirieix and Chef Chris Galvin at Galvin at Windows, and afterwards with Chef Theo Randall running his fine dining restaurant at the InterContinental Hotel in Mayfair for 6 incredible years.

Three years ago curiosity took her to London where she started working under the wing of Chef Theo Randall (famed for earning River Café its first Michelin star as head chef) as Pasta Chef in his flagship restaurant Theo Randall at the InterContinental. Additonally she has been collaborating with Table & Candle Supper Club with her signature Pugliese tasting menu.
