Orecchiette, also called "recchitelle" or "strascinati", are one of the most representative shape of pasta typical from Puglia. This first course is prepared throughout the region, even with different accompaniments from turnip greens such as broccoli or tomato sauce. Cime di Rape, literally translated as turnip tip, Cime di rape are members of the brassica or mustard family group.
Orecchiette with Cime di rapa is the most common match for orecchiette in Puglia, usually we put anchovies to contrast the swetness of the turnip. Starting from the traditions, our version is a pesto of Cime di rapa, mixed with the classic anchovies adding almond and pecorino romano. A well balanced mix that give you a very round flavour.
